What is the driving force of true art in all its forms and why dowe make it?

I believe art is a way to express things that can not be expressed in words, or also before cameras to capture a special moment in time (at least sculpture, painting, drawing etc). Other types of art such as fine cuisine and fashion, arose out of necessity and have been elevated through human being's desire to express themselves and innovate

Regarding writing I was once told that one writes, in part, to discover what one thinks. It makes sense to me. I have no experience with other art forms.
